I think sun dry...Congratulations on the tomatoes! I think sun drying is great if you live in a dry Mediterranean clime. With my humidity, they molded. Oven drying worked well, but a real fruit dryer would have been great. I found they made nice Christmas presents, especially packed in olive oil with garlic and basil.
